This is one of my favourite sandwiches to make. Spicy yet creamy with a bit of crunch. Here's what you'll need:
- 1 can (345 g) Kirkland chicken breast (or if you feel inclined... 1 chicken breast chopped up finely should do)
- 1-2 tbsp olive oil
- 1/4 of a red onion
- 1/2 of a red pepper
- 2 tbsp blue cheese dressing
- 2 tbsp Franks Red Hot Sauce (3 if you like things spicy)
- Your favourite bread or buns
And here is how to put all this deliciousness together:
- Cut red pepper and red onion into small squares. Keep em separated.
- Put some olive oil in a pan on medium heat.
- When oil has heated up throw in the red pepper.
- After the peppers have started to soften (2-3 minutes) throw in the onions
- Cook together for 1-2 minutes.
- Put chicken into a container with peppers, onion, blue cheese dressing, and hot sauce. Mix it up.
- Place liberally on your favourite toasted bread or bun. Top with thin sliced dill pickles to add some extra flavour to the dish. Enjoy!
